This wine is reminiscent of Madeira. Made from loft dried grapes the resulting wine is semi-sweet and high in alcohol, 16.5%*, with oakey flavours, though the fruit is still evident.
Like Madeira its ageing process shares a similar lengthy period in high temperatures. For Vin Santo the period is longer, with more temperature variation, and in partially filled barrels - often for 3 or 4 years.
