Game requires complex red wines with layers of fruit and a bit of age. For fresh game our red Burgundy Pinot Noir DOMAINE PARENT would be the first choice followed by those of the New World. (Our full selection of Pinot Noir is available here ).The longer a bird is hung the more mature the wine should be such as mature Claret, Northern Rhone, Tuscan and Spanish wines.
Hare in Jugged form often uses Port and/or redcurrant jelly in the recipe so a full bodied red is required: Italian wines made from the Nebbiolo grape such as Barolo, Australian Shiraz and a hearty South African Pinotage would be appropriate. Rabbit requires slightly less powerful reds such as Chianti, wines from the southern Rhône and the lighter Argentinean Malbecs. Well-hung venison again loves red wine and would work well with any of the above. Further suggestions are linked below. |
